Cheese and Courgette Muffin Surprise
225g Self Raising Flour
100g Courgette – grated
100g Cheddar- grated
175ml Milk
One Egg
55ml Olive Oil
10 Cherry Tomatoes
Salt and black pepper to taste.

Pre- heat oven to 220c/ Gas 6
Combine flour, courgette, cheese and salt and pepper in a large bowl. Mix well.
Combine oil, egg and milk in another bowl. Add to dry ingredients and mix well.
Grease ten muffin moulds and half fill each with the mixture
Then prick each cherry tomato with a fork,(this stops them exploding whilst baking!) and press one into each muffin and top with another spoonful of the mixture.

Bake for 20 mins or until golden brown and well risen.
