An excellent way to use broken meringues …

2oz Meringues
1/2 pint Double Cream
Grated zest & juice of 1 lemon
1/2 jar of Lemon Curd

Line a 1lb loaf tin with clingfilm
Break up meringues and leave to one side
Whisk cream
Add lemon zest, juice and curd to the cream
Fold in the meringue pieces
Spoon the mixture into the lined tin
Freeze for 6 hrs
(Keeps for up to 1 month in freezer)
