I have found a lovely recipe for Lemoncello, I have done it and can highly recommend it
Makes about 2 litres.
Juice and finely grated rind of 8 unwaxed lemons
800g of granulated sugar
650 ml water
1 litre of vodka
Place the lemon zest in a large pan with the sugar and water. Heat gently until the sugar dissolves, then increase the heat slightly and simmer for 15 minutes. Set aside until lukewarm. Add the lemon juice and vodka to the pan, then cover and leave the liquid to infuse for a week.
Using a sieve lined with muslin or kitchen paper, strain the liquid over a large bowl.
Decant into sterilised bottles and seal tightly.
It will keep for 6 months but you’ll probably run out of it by then !
