Another lovely recipe from our Kitchen WIsdom cook book … and a great way to use up all those courgettes!

Put a saucepan on a medium heat and add butter and olive oil
Add onions & carrots and cook until browned
Add courgettes & pears and cook for 10 mins
Add water, potatoes & salt
Place lid on the pan and reduce to a low heat
Simmer until veggies are fork tender (about 30 mins)
Remove from heat and with a blender puree the soup until smooth
Stir in the cream and season
