Spanakopita – Greek spinach pies (vegan version)
I prefer these at room temperature. Delicious but very tempting to grab one every time you walk past!
Ingredients (serves 4):
1 tbsp olive oil
Large onion (chopped)
8 oz spinach (washed and drained)
2 oz pine nuts
2 tsp dried dill (or 1 tbsp. fresh)
Ground black pepper
Olive oil for brushing
Fry the onion in the oil for 10 minutes until tender but not browned. Add the spinach and pine nuts and fry on a medium heat for a 3 to 4 minutes. Add the dill, season to taste, remove from the heat and leave to cool.
Preheat the oven to gas mark 6 or 200°C.
Lay the sheets of pastry on a work surface, longest edge at the top, then cut to make 3 vertical strips from each.
Put a spoonful of the spinach mixture on the top of one of the strips of filo, then fold down to the left, enclosing it in a triangle shape. Then fold to the right, then to the left and continue until all the filo strip has been used. Continue until all filling and pastry has been used.
Brush the pies with olive oil and place on a baking sheet. Bake for 15 to 20 minutes until crisp and golden. Serve hot, or allow to cool.
