Sweet Marrow and Chilli Pickle
3lb marrow – peeled and cubed
3lb onions –chopped

MILD: Two chillies, deseeded and chopped finely
HOTTER  : Three chillies with seeds left in and chopped finely

Layer marrow, onion and chilli in a bowl, sprinkle each layer with salt and leave for at least 12 hours.

3lb Granulated sugar
1 good teaspoon of each:
Ground ginger
Mustard powder
White vinegar
3 good tablespoons of cornflour.

Rinse the vegetables under cold water and put in large pan.
Just cover them with vinegar.
Boil for 15 mins.
Add sugar and boil for 5 mins.

Mix dry ingredients with a little vinegar and 3 tablespoons of sugar.
Add to the boiling vegetables , stirring madly.  Boil for 5 mins then pot up
